Care information

Proper storage and handling can help maintain seed quality and germination performance. Keep seeds sealed, dry and protected from heat, moisture and direct sunlight.

Storage: For best long-term storage, keep seeds refrigerated in a clean, airtight container or securely sealed packaging. A refrigerator at approximately 4°C provides a cool, stable environment that can help maintain seed viability. If refrigeration is not practical, store seeds in the coolest available dry, dark and temperature-stable location.

Moisture: Keep seeds dry at all times during storage. Excess moisture or humidity can reduce seed quality and encourage premature germination, mould or deterioration. Always reseal opened packaging promptly.

Removing Seeds from Refrigeration: Keep refrigerated seeds sealed while they return to room temperature before opening the package or container. This helps prevent condensation from forming on cold seeds and introducing unwanted moisture.

Temperature: Avoid repeated temperature changes and do not store seeds near ovens, heaters, windows, vehicles, sheds or other areas exposed to excessive or fluctuating heat.

Handling: Use clean, dry utensils when removing seed from larger packs and return the remaining seed to refrigerated storage promptly after use.

Before Sowing or Sprouting: Inspect seeds before use and discard any showing signs of moisture damage, mould, unusual odour or deterioration. When growing edible sprouts or microgreens, use clean equipment and drinking-quality water.

Best Quality: Use seed while fresh and follow any product-specific storage, germination and growing information provided in the Specifications, growing instructions or product packaging.

Seed Biosecurity – WA & Tasmania

Seeds and other plant material may be subject to state biosecurity restrictions.

Western Australia has specific entry requirements for seed, and seed consignments may be inspected by Quarantine WA. Tasmania also regulates the importation of viable seed, with additional requirements applying to certain species and consignments.

Requirements vary by seed species, quantity and destination and may change over time. Customers in Western Australia, Tasmania and other biosecurity-controlled areas should check current state requirements before ordering.

Where an order contains seed that cannot meet applicable biosecurity requirements, we may need to contact you before dispatch or remove affected products from the order.

Organic Rye Grain – Sprouting, Cooking & Milling

Australian-grown organic rye grain for sprouting, cooking, milling into rye flour, rye grass and cover-crop growing. Earthy, nutty whole grain available in bulk sizes Australia-wide.

Description

Australian Organic Rye Grain for Sprouting, Cooking & Milling

Our Australian-grown organic rye grain is a versatile whole grain suitable for sprouting, cooking, home milling and growing. Rye has a distinctive earthy, mildly nutty flavour and pleasantly chewy texture, making it useful for everything from short grain sprouts and cooked rye berries to whole rye flour and traditional bread making.

The same viable whole grain can also be grown into rye grass, planted as a cover crop or allowed to mature as a cereal crop, giving it practical uses in the kitchen as well as the garden.

Grow Sweet, Chewy Rye Sprouts

Rye germinates readily and produces short grain sprouts with a mild, slightly sweet and nutty flavour. For the best texture, harvest while the root remains relatively short and the grain is still firm and pleasantly chewy.

Rye is well suited to growing in a Glass Sprouting Jar or another suitable sprouter. Regular rinsing, thorough drainage and good airflow are the main requirements for reliable germination.

Rye sprouts can be added to grain bowls and other savoury dishes or incorporated into suitable bread and cooking recipes. Because these are edible sprouts, careful hygiene, thorough drainage and prompt refrigeration after harvest are important.

Cook Whole Rye Berries

Rye grain can also be cooked directly without sprouting. Simmered rye berries develop a firm, chewy texture that works particularly well in soups, casseroles, grain salads, pilafs, breakfast bowls and savoury side dishes.

Soaking the grain before cooking is optional but can soften the berries and reduce cooking time. Once tender, cooked rye can be used much like other substantial whole grains while retaining its distinctive rye flavour and texture.

For a milder grain with a lighter texture that can also be cooked whole or milled into flour, see Hulled Millet Grain.

Mill Rye Grain into Whole Rye Flour

Dry rye grain can be milled using suitable equipment to produce whole rye flour. Rye flour is traditionally used for rye breads, sourdough, pumpernickel-style loaves, crispbreads, crackers and other rustic baked goods.

Whole rye grain can also be cracked or coarsely milled for porridge and other grain preparations.

Rye contains gluten and is not suitable for people who need to follow a gluten-free diet.

Grow Rye Grass, Cover Crops & Mature Rye

Viable rye grain can be grown beyond the short sprout stage into dense rye grass or planted outdoors and grown towards maturity as a cereal crop.

Rye is also used as a cool-season cover crop and green manure because of its vigorous growth and substantial root system. It may also be grown as green forage where appropriate.

How to Sprout, Cook & Use Rye Grain

Organic rye is a versatile whole grain that can be grown as short edible sprouts, cooked as rye berries, milled into rye flour or grown into rye grass.

How to Grow Rye Sprouts

What You Need

  • Approximately 3 tablespoons / 30g of rye grain
  • A clean 500ml wide-mouth glass jar or suitable sprouter
  • A sprouting lid or draining screen
  • Clean drinking-quality water
  • A draining stand, rack or bowl

Step-by-Step Instructions

  1. Clean your equipment: Wash your hands and thoroughly clean the jar, lid and utensils before starting.
  2. Measure the grain: Add approximately 3 tablespoons / around 30g of rye grain to a 500ml sprouting jar.
  3. Rinse thoroughly: Rinse several times with cool drinking-quality water and remove any visibly damaged or deteriorated grains.
  4. Soak: Cover generously with water and soak for approximately 8–12 hours.
  5. Drain completely: Discard the soaking water, rinse again and drain thoroughly.
  6. Position for airflow: Keep the jar tilted with the opening facing downward so excess moisture can escape and air can circulate.
  7. Rinse regularly: Rinse and thoroughly drain approximately 2–3 times each day.
  8. Maintain suitable conditions: Keep at approximately 10–22°C, away from hot direct sunlight.
  9. Watch for germination: Short white roots should begin emerging as the grain germinates.
  10. Harvest: Rye sprouts are generally ready within approximately 2–4 days. Harvest while the roots remain relatively short and the grain is still firm and chewy.

Tips for Best Results

  • Do not overcrowd the jar.
  • Drain thoroughly after every rinse.
  • Do not leave the grain sitting in standing water.
  • Maintain good airflow.
  • Keep short grain sprouts away from hot direct sunlight.
  • Harvest before the roots and shoots become long or fibrous.
  • Rye sprouts naturally have more chew than delicate leafy sprouts.
  • Discard any batch showing obvious mould, slime, decay or an abnormal smell.

Harvest & Storage

Give the finished sprouts a final thorough rinse and drain them as completely as practical.

Transfer to a clean covered container and refrigerate promptly.

Use while fresh and discard the sprouts if their appearance, smell or texture deteriorates.

Food Safety

Raw sprouts can carry harmful bacteria even when carefully grown at home.

Always use clean equipment and drinking-quality water, maintain thorough drainage and refrigerate harvested sprouts promptly.

People at increased risk from foodborne illness, including pregnant women, young children, some older people and people with compromised immunity, should avoid raw or lightly cooked sprouts.

Thorough cooking reduces the food-safety risk associated with raw sprouts.

How to Cook Whole Rye Berries

Rye can also be cooked directly without sprouting.

  1. Rinse: Rinse the dry grain thoroughly.
  2. Optional soak: Soak for approximately 8–12 hours to soften the grain and shorten cooking time.
  3. Drain: Discard the soaking water and rinse again.
  4. Add fresh water: Use approximately 1 cup rye grain to 4 cups water.
  5. Bring to the boil: Combine in a saucepan and bring to the boil.
  6. Simmer: Reduce the heat and simmer gently for approximately 45–60 minutes, or until the grain is tender but still pleasantly chewy.
  7. Check during cooking: Add additional hot water if required before the grain is tender.
  8. Drain: Remove any excess cooking liquid before serving.

Ways to Use Cooked Rye Berries

  • Grain salads
  • Pilafs
  • Soups
  • Stews and casseroles
  • Grain bowls
  • Breakfast bowls
  • Savoury side dishes

How to Mill Rye Flour

  1. Make sure the rye grain is completely dry.
  2. Add it to a suitable grain mill.
  3. Mill to your preferred fine or coarse consistency.
  4. Use whole rye flour in suitable breads, sourdough, crackers, crispbreads and other baked goods.

Rye flour contains gluten, although it behaves differently from wheat flour in bread making and is commonly combined with wheat flour in recipes where greater structure or rise is required.

How to Grow Rye Grass

  1. Soak the rye grain for approximately 8–12 hours.
  2. Drain thoroughly.
  3. If preferred, allow the drained grain to begin germinating for approximately 12–24 hours before sowing.
  4. Fill a shallow tray with approximately 2–4cm of moist growing medium.
  5. Spread the grain densely and evenly across the surface.
  6. Press gently into the growing medium.
  7. Cover during early establishment without sealing the tray airtight.
  8. Remove the cover once the shoots are established.
  9. Provide bright indirect light or a suitable grow light.
  10. Keep the growing medium consistently damp without waterlogging.
  11. Maintain good airflow.
  12. Harvest young rye grass at approximately 7–10 days, depending on growing conditions and your preferred height.

Other Growing Uses

Viable rye grain can also be planted outdoors for:

  • Mature cereal rye
  • Cover cropping
  • Green manure
  • Green forage

Storage

Store dry rye grain tightly sealed in a cool, dry and dark location away from heat and moisture.

For longer-term storage, refrigeration can help maintain seed viability. Keep refrigerated grain sealed while it returns towards room temperature before opening the container to help reduce condensation.

Unlike my other grains from wheatgrass Australia, these did not sprout in the initial batch. The company reached out after my feedback, and did everything possible to help, including sending a new batch. While I've been travelling and not able to try them out, I really appreciate that they did everything possible to support. I will certainly keep buying my sprout seeds from them. Thanks guys!

Hi Carla, I’ve found that the only reliable way to prevent fermentation with rye is to sanitise it first. The most effective method I’ve used is a bleach solution, though white vinegar will also work

I know bleach doesn’t sound ideal, but according to the NSW Food Authority (Australian food safety regulations), sprouting seeds must be soaked in a 200ppm chlorine (bleach) solution for 15 minutes, that's the legal requirement for commercial growers. It’s definitely overkill for home use, but during our nearly 10 years as commercial sprout growers, we had to follow those standards.

In practice, all you really need is a couple of drops of bleach in a jar of water. Soak the rye for 15 minutes and give it a good stir to ensure even exposure. This will effectively kill all bacteria, including the lactic acid bacteria naturally found on rye that causes fermentation.

One more tip: After sanitising, rinse the rye thoroughly at least 5 times. Then soak in clean water for just 3 hours, and rinse/drain 4–5 times a day. The result should be clean, safe, fermentation-free rye sprouts ready to enjoy.
