Care information

Proper storage and handling can help maintain seed quality and germination performance. Keep seeds sealed, dry and protected from heat, moisture and direct sunlight.

Storage: For best long-term storage, keep seeds refrigerated in a clean, airtight container or securely sealed packaging. A refrigerator at approximately 4°C provides a cool, stable environment that can help maintain seed viability. If refrigeration is not practical, store seeds in the coolest available dry, dark and temperature-stable location.

Moisture: Keep seeds dry at all times during storage. Excess moisture or humidity can reduce seed quality and encourage premature germination, mould or deterioration. Always reseal opened packaging promptly.

Removing Seeds from Refrigeration: Keep refrigerated seeds sealed while they return to room temperature before opening the package or container. This helps prevent condensation from forming on cold seeds and introducing unwanted moisture.

Temperature: Avoid repeated temperature changes and do not store seeds near ovens, heaters, windows, vehicles, sheds or other areas exposed to excessive or fluctuating heat.

Handling: Use clean, dry utensils when removing seed from larger packs and return the remaining seed to refrigerated storage promptly after use.

Before Sowing or Sprouting: Inspect seeds before use and discard any showing signs of moisture damage, mould, unusual odour or deterioration. When growing edible sprouts or microgreens, use clean equipment and drinking-quality water.

Best Quality: Use seed while fresh and follow any product-specific storage, germination and growing information provided in the Specifications, growing instructions or product packaging.

Seed Biosecurity – WA & Tasmania

Seeds and other plant material may be subject to state biosecurity restrictions.

Western Australia has specific entry requirements for seed, and seed consignments may be inspected by Quarantine WA. Tasmania also regulates the importation of viable seed, with additional requirements applying to certain species and consignments.

Requirements vary by seed species, quantity and destination and may change over time. Customers in Western Australia, Tasmania and other biosecurity-controlled areas should check current state requirements before ordering.

Where an order contains seed that cannot meet applicable biosecurity requirements, we may need to contact you before dispatch or remove affected products from the order.

Stock Edible Flower Seeds

Stock edible flower seeds produce tall, fragrant flower spikes with richly coloured blooms and a sweet clove-like aroma. Ideal for edible garnishes, cut flowers, sunny borders and cool-season gardens.

Description

Stock Edible Flower Seeds for Fragrant Culinary Blooms

Stock edible flower seeds produce elegant upright flower spikes packed with richly coloured, sweetly fragrant blooms. Known for their distinctive clove-like scent and strong stems, Stock combines culinary use with excellent performance as a garden and cut flower.

The edible flowers have a sweet, aromatic and mildly spicy character with distinctive clove-like notes. Their fragrance is relatively pronounced, so a small quantity of petals or florets can add colour and aroma without overwhelming a dish.

Edible Flowers for Garnishes & Desserts

Fresh Stock flowers can be used as colourful garnishes for salads, cakes, desserts, fruit plates and other culinary presentations. Individual petals or florets can be separated from the flowering spike and scattered over dishes where their colour and fragrance can be appreciated.

Harvest freshly opened, clean flowers close to when they will be used. Because Stock is strongly scented, begin with a small quantity and adjust according to taste.

Fragrant Flowers for Cutting & Garden Displays

Stock develops strong, upright stems topped with dense flower spikes, making it particularly useful for cutting gardens and fresh arrangements. Its powerful sweet fragrance can add scent as well as colour to garden spaces and indoor displays.

For fresh arrangements, harvest stems when approximately one-third to one-half of the florets have opened and place them promptly into clean water.

Ideal for Borders, Cutting Gardens & Containers

Stock performs well in sunny garden borders, cottage gardens, raised beds, edible flower gardens and dedicated cutting rows. Its upright habit also works well behind lower-growing flowers where the tall spikes can provide contrasting height.

Stock can also be grown in larger containers with reliable drainage. A stable pot is preferable because mature flowering stems can become relatively tall.

Easy to Raise from Seed

For the most reliable establishment, Stock is best raised in seedling trays, cells or small pots before transplanting. The small seeds require light for germination and should be surface sown rather than buried.

If additional surface moisture retention is needed, an extremely fine dusting of Vermiculite Growing Medium can be used while still allowing light to reach the seed.

Under suitable conditions, germination generally occurs in approximately 7–14 days.

Best Grown Through Cool to Mild Conditions

Stock is a cool-season flowering annual that performs best when plants develop and flower before prolonged summer heat. Full sun, fertile well-drained soil, consistent moisture and good airflow support strong stems and flower production.

Established plants tolerate cool conditions and light frost better than many warm-season annual flowers, making Stock particularly useful for autumn, winter and spring growing in suitable Australian climates.

Grow for Both Culinary & Cut Flower Use

Stock provides both edible flowers and excellent cut stems from the same crop. Harvest selected florets for culinary use while allowing other flower spikes to develop for garden display or fresh arrangements.

Succession sowings several weeks apart can help extend the overall flowering and harvesting period.

How to Grow Stock Edible Flowers

For the most reliable establishment, raise Stock seedlings in trays, cells or small pots before transplanting.

Sowing Method

Stock seeds are small and require light for reliable germination.

To raise seedlings:

  1. Fill trays, cells or small pots with a fine, free-draining seed-raising mix.
  2. Moisten the growing medium before sowing.
  3. Scatter or place the seeds across the surface.
  4. Gently press the seeds into firm contact with the moist mix.
  5. Do not bury the seeds.
  6. If required, apply only a very fine dusting of vermiculite.
  7. Mist gently or bottom-water so the seeds are not displaced.
  8. Keep the growing medium consistently moist but not saturated.
  9. Maintain cool-to-moderate conditions during germination.
  10. Once seedlings emerge, provide plenty of light and good airflow.
  11. Transplant while seedlings are young and actively growing.

Sowing Depth

Sow:

On the surface without covering

Stock seed requires light for germination.

Press the seeds gently into the growing medium rather than covering them with a normal layer of soil.

If additional moisture protection is required, use only an extremely fine dusting of suitable material.

Best Sowing Season

Stock is a cool-season flower and generally performs best when flowering occurs before prolonged summer heat.

As a practical Australian guide:

  • Cool climates: late winter through spring; autumn sowing may also be possible in protected locations
  • Temperate climates: late summer through autumn and again in late winter
  • Subtropical climates: autumn through winter
  • Tropical climates: coolest months
  • Hot or arid climates: autumn to early winter, avoiding extreme summer heat

Succession sowings several weeks apart can help extend the flowering period.

Germination

Expect germination in approximately:

7–14 days

Aim for a germination temperature of approximately:

15–20°C

During germination:

  • Maintain consistent moisture.
  • Do not allow the surface to dry completely.
  • Avoid waterlogging.
  • Provide light.
  • Avoid excessively hot propagation conditions.
  • Maintain good airflow once seedlings emerge.

Plant Spacing

Space established plants approximately:

10–15cm apart

Relatively close spacing encourages upright growth suitable for strong flowering stems.

Slightly wider spacing can be used where additional airflow is preferred.

Position

Grow Stock in:

Full sun

Stock prefers:

  • Cool to mild growing conditions
  • Plenty of direct sunlight
  • Well-drained soil
  • Moderate to good fertility
  • Consistent moisture
  • Good airflow

Established plants can tolerate light frost.

Soil & Drainage

Stock performs best in fertile, well-drained soil.

Choose a growing area that is:

  • Free draining
  • Moderately rich
  • Loose enough for healthy root development
  • Not permanently waterlogged
  • Neutral to slightly alkaline where possible

Before transplanting:

  1. Remove weeds.
  2. Loosen compacted soil.
  3. Incorporate mature compost where required.
  4. Make sure excess water can drain after rain or irrigation.

Watering

Keep Stock:

Consistently moist without waterlogging

During establishment:

  • Water young plants regularly.
  • Do not allow seedlings to dry severely.
  • Allow excess water to drain.

As plants develop:

  • Water deeply when required.
  • Avoid constantly saturated roots.
  • Reduce unnecessary overhead watering once foliage becomes dense.
  • Water earlier in the day where overhead watering is necessary.
  • Increase watering during dry or windy conditions.

Feeding

Stock benefits from moderate fertility.

Before planting, improve poor soil with mature compost or another suitable soil amendment.

Once established:

  • Feed moderately where required.
  • Use balanced plant nutrition.
  • Avoid excessive nitrogen.
  • Maintain suitable nutrition during stem and flower development.

Excessive nitrogen can encourage soft growth rather than strong flower stems.

Growing Stock in Garden Beds

Stock performs particularly well in:

  • Cutting gardens
  • Cottage gardens
  • Edible flower beds
  • Sunny borders
  • Raised beds
  • Dedicated flower rows

Space plants approximately 10–15cm apart.

For a stronger visual display, group several plants together rather than planting isolated stems.

Growing Stock in Containers

Stock can also be grown in sufficiently large containers.

Choose:

  • A container approximately 25–30cm wide or larger
  • Good drainage holes
  • Quality potting mix
  • A full-sun position
  • Protection from prolonged extreme heat

Because Stock develops upright flowering stems, use a stable container that will not tip easily.

Supporting Flower Stems

Stock generally develops strong, upright stems, but support may be useful in:

  • Windy gardens
  • Exposed locations
  • Areas receiving heavy rain
  • Closely planted cutting rows

Use discreet stakes, flower netting or another suitable support where necessary.

Managing Warm Weather

Stock performs best during cool to mild conditions.

Prolonged warm weather can:

  • Shorten flower stems
  • Reduce flower quality
  • Accelerate flowering
  • Shorten the overall bloom period

For best results:

  • Time sowings so flowering occurs in cooler weather.
  • Maintain reliable moisture.
  • Provide good airflow.
  • Avoid relying on midsummer crops in hot climates.

Frost & Cold Conditions

Established Stock can tolerate cool conditions and light frost.

Very young seedlings are more vulnerable.

Where severe frost occurs:

  • Raise seedlings under protection.
  • Harden them gradually.
  • Transplant once sufficiently established.
  • Protect plants during unusually severe cold snaps where necessary.

Harvesting Stock as a Cut Flower

For fresh arrangements, harvest flower spikes when approximately:

One-third to one-half of the florets have opened

To harvest:

  1. Choose healthy, straight stems.
  2. Cut using clean, sharp snips.
  3. Harvest while flowers are dry.
  4. Remove foliage that would sit below the water line.
  5. Place stems promptly into clean water.
  6. Keep arrangements away from excessive heat.

Harvesting Edible Stock Flowers

Harvest flowers that are:

  • Freshly opened
  • Clean
  • Undamaged
  • Dry rather than wet from rain or irrigation
  • Grown specifically for culinary use

To prepare:

  1. Harvest clean flower spikes.
  2. Inspect carefully for insects.
  3. Remove individual petals or florets.
  4. Discard damaged material.
  5. Rinse gently with clean water where appropriate.
  6. Use relatively small quantities because the flowers are strongly aromatic.

Stock flowers have a:

Sweet, floral and spicy character with distinctive clove-like notes

They can be used with:

  • Cakes
  • Desserts
  • Fruit plates
  • Salads
  • Decorative garnishes
  • Culinary presentations

Food Safety for Edible Flowers

Only consume Stock flowers intentionally grown for culinary use.

  • Use clean gardening and harvesting equipment.
  • Do not consume flowers treated with chemicals that are not approved for edible crops.
  • Avoid florist flowers where treatment history is unknown.
  • Do not harvest beside busy roads or from contaminated areas.
  • Inspect blooms carefully for insects.
  • Rinse gently in clean water where appropriate.
  • Discard flowers showing mould, slime or deterioration.
  • Introduce strongly aromatic edible flowers in small quantities.

Harvest & Storage

Edible Stock flowers are best harvested close to when they will be used.

For short-term culinary storage:

  1. Harvest clean, dry blooms.
  2. Remove damaged material.
  3. Place flowers gently into a clean container.
  4. Refrigerate promptly.
  5. Avoid crushing the petals.
  6. Keep excess moisture to a minimum.
  7. Use while fresh and fragrant.

For cut-flower arrangements, place harvested stems promptly into clean water.
